Simple Soba Noodles

There are days when I have hours to plan, prep, and cook beautiful meals and then, there are those when my family is hungry and I want something that can come together quickly. This is one of those dishes that I have for such occasions. It really only takes 15 minutes from start to finish and it’s endlessly versatile. I use this recipe as a base and then add to it…. fresh avocado, other herbs, shredded veggies, etc. The dressing is also very forgiving; sub honey for the maple syrup, rice vinegar for the lime, or tamari if you don’t have coconut aminos. It will taste great as long as you balance the flavors. I hope you enjoy this recipe and have fun making it your own. :)
