Sushi-ritos
Sushi night is always fun at our house. Even though we have many sushi restaurants near our home, there’s still something special about making it oneself. That being said, there are also those days that one doesn’t quite have time or perhaps the patience to ceremoniously roll and slice, roll and slice dozens of bite-sized pieces that seem to disappear faster than they are being produced.
And that is why the Sushi-rito is so very convenient. It’s a little bigger and heartier than the traditional roll and one slice down the middle is enough to get into it. The filling possibilities really are endless so I wasn’t specific in the recipe as to keep it open-ended.
It’s a hot summer day so I went for some more cooling ingredients: sliced cucumbers, avocado, mixed greens with a wasabi-mayo dressing and cilantro. If it were fall or winter, perhaps I would have chosen to add cooked vegetables which is more in line with Ayurvedic principles, but in the heat and humidity it just didn’t seem like the right thing for today.
Some other possible filings could include….
Baked tofu, roasted vegetables, shredded carrots, dressed greens, dal, sweet potatoes, avocado, beets, I could go on and on.
