Roasted Radish Bowl

It is hot outside today and I was feeling like something light, yet satisfying for lunch. This bowl is a nice blend of augmenting and extractive foods which nourish and gently cleansing the body, respectively. If you’ve never roasted radishes before, I encourage you to try them. Roasting brings out a lovely sweetness in the radishes and in addition, makes them easier to digest. The cumin, coriander, and fennel seeds in the rice add a nice herbal flavor while also increasing digestibility. The cilantro and mint in the salad have cooling qualities; ideal for keeping balanced on a warm day and the avocado on top adds a nice creaminess and a bit of a grounding quality to the dish. All of these elements come together to create a simple, balanced meal- this is what Ayurveda is all about.
